This is a recipe for a warm chicken salad with crunchy croutons.

This tasty chicken salad recipe makes for a lovely main meal or post-workout meal. It could also work well cold in a lunch box!

Ingredients (serves 1):

1 grilled chicken breast (cut in to pieces)
¼ small baguette (cut in to pieces)
2tbsp olive oil
½ tbsp balsamic vinegar
75g mixed leaf salad
125g beetroot
50g feta cheese

Per serving: 625kcal | 35g fat | 10g saturates | 32g carbs | 48g protein

Method:

1. Heat oven to 200c/fan 180c/gas 6.
2. Spread the pieces of chicken and the baguette pieces over a shallow roasting tray.
3. Drizzle with 1tbsp of olive oil and toss to coat.
4. Season as necessary, then put in oven for 15 minutes, or until the chicken is cooked through and the bread is golden and crisp.
5. Mix the remaining 1tbsp olive oil with the balsamic vinegar to make the dressing.
6. Present the leaves and beetroot on a plate, and scatter the cheese.
7. Toss with the warm chicken and bread, drizzle with the dressing, and serve straight away.
